Rosemary Black Tea Lemonade

Rosemary Black Tea Lemonade

  • 5 bags of black tea
  • 1 sprig of rosemary
  • 1/2 cup of sugar, honey would be a welcome replacement
  • 5 cups of water
  • 1 cup of ice
  • 1/2 cup of lemon juice, freshly squeezed (from a plastic lemon is fine)

Bring five cups of water to the boil. In a litre sized heat proof measuring cup (Pyrex ect.), steep the tea and rosemary sprig in four cups of the boiling water for eight minutes. With the remaining boiling water add a 1/2 cup of sugar and dissolve. Once the tea and rosemary have done their work, remove from the liquid being sure to NOT to squeeze the bags of tea to ensure the tea remains crystal clear. Combine the sugar syrup, lemon juice with the tea mixture into a serving pitcher once both have cooled significantly and top up with the ice. You can serve this immediately into glasses filled with ice, or refrigerate until needed. This iced tea is made to withstand the melting ice so use your discretion in adjusting the water level in the recipe. If you don’t like ice, dilute this tea with cold water to your taste!

Blueberry Basil Lemonade

Hot summer days leave us all craving something cold to quench our thirst. Ottawa has been extremely hot this summer and coming back to Vancouver Island has been quite an abrupt change; I’ve rediscovered the need for sleeves on my shirts and socks on my feet. However, I think that this will make the perfect sunny afternoon beverage anytime of the year (even if Islanders need to wait until September to see the sun again).

Feel free to sooth your sorrows by spiking this recipe with vodka, and serve it over plenty of ice.

  • 1/4 tsp sea salt
  • 1/2 cup of freshly squeezed lemon juice
  • 1/2 cup of freshly squeezed lime juice
  • 1/2 cup of superfine sugar (or use your favourite sweetener)
  • 1/2 cup of blueberries, sliced in half
  • Sprig of Basil (Use mint if you’re scared)
  • 4-5 cups of water
  • Vodka, if you want… you know, to pretend its summer?

In a pitcher, combine blueberries, basil, salt and sugar and let macerate for 30 minutes. Add lemon juice, lime juice and water. Chill overnight for the best infusion of flavours, but it is good to drink right away. Fill glasses with lots of ice, add vodka and pour lemonade over garnish with a basil.
